Sahm’s planning pizza pub

Prolific local restaurateur Ed Sahm is working to open a pizza pub in a former strip-mall CVS next door to Sahm’s Restaurant in Fishers.

A building permit issued this month identifies the eatery planned for 11501 Allisonville Road as Rockstone Pizza. Its liquor license, approved in March, calls it Rockstone Pub.

Sahm didn’t return messages left at the Fishers restaurant, but a friendly server—one of the hallmarks of the family-oriented chain—said diners have responded well to the house-made pizza at Sahm’s Bar and Grill on 96th Street, spurring the spinoff.

Although each of the 10 locations has its own menu, Sahm’s prides itself on “comfort-inspired” food using fresh, local ingredients. All breads, sauces and soups are made in-house daily—including its pizza dough and tomato sauce.

Goose the Market’s capocolla, andouille and fennel sausage are among the more exciting topping options (meatloaf and broccoli notsomuch).

Rockstone will occupy 4,800 square feet of space in what’s left of a CVS storefront left vacant when the pharmacy swapped locations with Sahm’s Restaurant several years ago. Sahm’s, which had been across the street in a stand-alone building at the southwest corner of Allisonville and 116th Street, moved into smaller quarters in a portion of the CVS space.

The pizzeria will seat about 60 and have a staff of 10, according to project information filed with the state.
