Mexican chain Chuy’s planning Noblesville location

Growing Texas-based restaurant chain Chuy’s plans to open its second Indiana location next summer in a new building at Hamilton Town Center.

Chuy’s, which serves up made-from-scratch Tex-Mex dishes, is expected to employ about 30 and have a capacity of 300.

It wasn’t immediately clear where the building will be located. The construction now under way at the Noblesville lifestyle mall will add about 80 parking spaces near Campus Parkway; that project is expected to be complete next month.

Founded in Austin more than three decades ago, Chuy’s owns and operates 46 full-service restaurants in 13 states. Its southern Indiana location in Clarksville opened in 2011.

The company prides itself on creating a fun, eclectic atmosphere. Its motto: “If you’ve seen one Chuy’s, you’ve seen one Chuy’s.”

Signature dishes such as “Big As Yo Face” burritos  and “Chicka-Chicka-Boom-Boom” enchiladas feature fresh flour and corn tortillas, hand-rolled daily in the dining room.
 
Parent company Chuy’s Holdings Inc., which went public last year, opened eight restaurants last year and plans about the same number of new eateries this year. The eatery debuted in Ohio last month with the addition of a suburban Cincinnati outpost.

In other area retail news:

— A former hair salon on 126th Street near State Road 37 in Fishers is being transformed into New York Pizza Garden. Expected to open this year, the 1,500-square-foot restaurant will have a small dining room along with carry-out and delivery service. In addition to pizza, the eatery will feature salads, “monster” subs, burgers, pasta and other entrees—all available for delivery from 10 a.m. to 3 a.m. (and 4 a.m. on weekends), owner Malek Smadi said.   

— Chef Suzanne Rockwell is working to open a 1,900-square-foot catering facility at 12550 Promise Creek Lane in Fishers. The first floor will include a commercial kitchen, space for customers to order and pick up chef-prepared meals, and room for small cooking classes. Rockwell said a mezzanine planned for the second floor will be able to accommodate special events. She expects to move in by Nov. 15. In the meantime, Rockwell is running Chef Suzanne’s Catering out of Geist Christian Church. She started the business in 2010 and previously operated from a base at Indian Lake Country Club in Lawrence.

— South of Chicago Pizza and Italian Beef expects to open its Fishers location in November at 13578 E. 131st St., just west of Olio Road. The restaurant got its start on Virginia Avenue near downtown Indianapolis.
